Crazy Jar Lady!

Wednesday is here and that means we are half way to the weekend! Woo Hoo and as I just typed that I realize I use that term way too much! 😉 Oh well it could be worse huh?

It’s day 3 on my 7 week low sugar challenge and I must say I’m feeling good. Granted its only day 3 but having the self control to say no to unneeded sweets is a liberating feeling. There has even been cakes in cookies in our kitchen at work and I walk right on by plus I work with some great girls who are encouraging me and keeping me accountable.

I have to let you in on an obessesion of mine…. I LOVE containers, jars, and anything that will hold or display food. I’m pretty sure I inherited that trait from both my mom and grandma.

My collection has grown over the years all thanks to my love of thrift stores, garage sales, antique shops and my mom feeding my obsession by gifting them to me. I’m even known to recycle glass jars that previously housed something like juice or dressing.Yes it’s a problem but I’m ok with it. 😊

Staring at all my little glass prized possessions last night I decided to give the jars some use. As I was flipping through some older Southern Living magazines the other day it gave me a hankering for something with a southern flare but healthy at the same time. My mind automatically went to beans, biscuits, cornbread and a host of all kinds of other tasty things I grew up with. While most of those things are not the healthiest choices nothing says the south like beans or biscuits!

My taste buds love so many good southern favorites but out of them all I have to say that my most favorite has to be biscuits. Mmmm …. I love them fresh and hot from the oven spread with butter and maybe a little jam. There’s is nothing better but biscuits are only a once in awhile treat because they are not kind for the figure. I don’t want a biscuit gut!

I had mentioned in a previous post that I was doing some investigating on Paleo diet recipes and lo and behold I found one for a biscuit! Yes!!!!

Last night I gave it a try and they turned out pretty good. They were a little more like cornbread but that’s ok because that’s where I’m going with my lunch plans for today.

My lunch today is a beautiful, protein packed and delicious layered southern salad in a jar.

1 cup northern beans
1 medium tomato
2 baked and crumbled Paleo biscuits ( see above link for recipe)
1/4 cup chopped onion
1/4 cup chopped red and green peppers
1/4 cup chopped cooked beets

* Layer it in a jar, pack it and enjoy!

I’ll serve this right up with a little dressing I concoct using Trader Joes Balsalmic Glaze and Honey Mustard.

A little bit of yummy southern charm in a jar! I’ll take it!

Lunch doesn’t have to be boring and yes those jars and containers come in handy! They are great for making parfaits, layered dishes and overnight oats.😊
